Wings and Things in Exeter are one of the Traders you can find at the Guildhall Foodmarket specialising in Filipino street food

The name gives away part of their food offerings as yes they do serve wings, they also were selling noodles (hence my interest), dumplings and Rice bowls

SPECIALS BOARD

The specials board was offering a PORK CALDERETA detailing it as ‘Tender Pork Belly with Jasmine Rice‘ a classic Filipino dish. I fancied some of that so we ordered a couple of bowls

While we waited I got chatting to the chef and owner about all things food and she gave us a few extra bits to sample.

I said I loved dumplings so we were each treated with one of the SIOMAI, a Pork dumpling in sweet chilli garlic sauce, absolutely banging, very delicious, thin wrapper and a nice level of spice

When the main event arrived we we also treated with one of the wings (top right in the pic) as she really wanted us to try them. I have to say that they were also jolly good, lovely light crispy batter coating the wing meat. I could have eaten a bucket of these too

PORK ADOBO

Anyway how about this Pork dish then? I had read the menu description calling it PORK CALDERETA but when we got home and I was googling how to cook it, it did not sound the same, so I looked on Deliveroo and saw that they also sell PORK ADOBO so I wondered if that was what we actually got in the end lol

It didn’t matter one jot to me as it was fabulous whatever it was called! I wrote on Instagram shortly after eating it on a park bench “Very tender pork almost silken, the soft fat left on the meat which I love. Taste was very harmonious with a mix of vinegar, garlic, sugar and salt hard to describe but very very moreish”

That is just how I remembered it, the amount of pork belly was very generous and it was indeed soft and unctuous. The juices and the gravy sauce seeped into perfectly cooked jasmine rice so that the taste sensations continued to shine their way through the bowl.

I feel slightly bad at how much I went on about the dish now as a friend of mine made a special trip into Exeter to try them out and they were not selling it on that day. I hope that they have it on the next time I visit!

Wings and Things can be found at the Market Square in the Guildhall Food Market in Exeter which is located just outside the Guildhall Shopping Centre, EX4 3HP in the small amphitheatre near the entrance.

Basically head towards Pho, Brew Dog, and Franca Manca and its just past them 😂
