Cooking the Sabzi Dahl

Last Autumn we had breakfast at the rather lovely Sabzi in Padstow and thoroughly enjoyed the meal. The food was divine, a total taste sensation and full of flavours that my palate rarely gets to enjoy.

For the record I had a bowl of their seasonal breakfast which turned out to be a bowl of ‘Middle Eastern style beans with tomatoes, Greek yoghurt, feta, spices served with a fried egg and herbs‘It was a “bit like a shakshouka” only less runny and with a lot more beans. (read more here)

SABZI DAHL JAR

The food was so tasty that we felt the desire to buy some of the spice blends and mixes that they were selling in the cafe.

I picked out a jar of their Sabzi Dahl Blend hoping that when we returned home I could recapture some of the essence of the flavours we had just tasted

Reading the label we learned that the spice blend is a mix of ‘turmeric, coriander, cumin, fennel, chilli, Garam masala, and sea salt’

It smelt great in the jar and I had high hopes it was going to deliver the flavours when we whipped up this Dahl at home

SABZI DAHL RECIPE

The jar came with a menu card which I was to attempt to follow to make the Dahl, trying to cut down the quantities to feed 2 instead of 6! I usually fail when I do this and we end up with seconds and sometimes thirds 😎🤣

The Dahl was made up of red lentils, onions, ginger, garlic, tomatoes, coconut milk, tomato purée, mango chutney and lime juice alongside a several spoonful’s of the spice blend

Essentially my version of the cooking instructions was as follows

1. Cook the onions, ginger and garlic until soft and fragrant

2. Add the spice blend to taste, spoonful per person was recommended

3. Stir in tomato purée and lime juice

4. Add lentils and tin of tomatoes. Cook down topping up with water as needed

5. Stir in some mango chutney and the coconut milk cook until lentils tender

6. Time to tickle your tastebuds adding more lime juice, pepper, mango chutney according you what you like

SABZI DAHL

This turned out to be a very successful attempt, I loved the texture of the dahl, slightly crunchy in places with a bit of give from the lentils, but a soft easy dish to eat.

It was a very tasty dish which we spooned up with much gusto and mopped up with some home made flatbreads 🥳

The sharp acidity of the lime along with the sweet spice from the mango chutney marries well with the tangy tomato sauce and somehow it all comes together to make a lovely warming bowl packed with middle eastern flavours.

A dollop of Greek yogurt and a sprinkle of fresh coriander were added at the end for a bit of Excitement for your senses 🤪

If (when) we are back in Padstow I will most certainly be popping back in through the doors of the cafe to see what else they have to try!
